Preparation

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • In a medium bowl, mix together Parmesan cheese, breadcrumbs, garlic powder, onion powder, dried oregano, salt, and pepper.
  • In another bowl, beat the eggs.
  • Slice the zucchinis into fry shapes, ensuring uniformity for even cooking.
  • Dip each zucchini fry into the beaten egg, allowing excess to drip off.
  • Coat each fry with the Parmesan mixture, pressing lightly to adhere.
  • Place the coated fries on the prepared baking sheet and lightly spray with olive oil.

Cooking

  • Bake in the preheated oven for 20–25 minutes, flipping halfway through until golden brown and crispy.
  • Remove from the oven and let cool for a few minutes before serving.

Notes

Serve with marinara, ranch, or garlic aioli. These fries are a great appetizer, snack, or side dish.
