For the cod

  • 1 1/2 pounds fresh cod Brings a delicate texture
  • 3 tablespoons salted butter Can use up to 5 for more richness

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • Grease a rimmed baking sheet with cooking spray.
  • Combine the Parmesan cheese, garlic powder, and paprika on a dinner plate.
  • Zest half a lemon into the cheese mixture, and add the chopped parsley, mixing well.
  • Rinse the cod under cold water, ensuring to check for bones, then pat dry.
  • Melt the butter in a small pan or microwave, then set aside.
  • Set up a coating station with the fish, melted butter, cheese mixture, and the baking sheet.

Coating and Baking

  • Dip each piece of fish into the melted butter, coating both sides, followed by dredging in the cheese mixture.
  • Place the coated fish on the baking sheet, ensuring they aren’t overcrowded.
  • Drizzle any remaining melted butter over the fish.
  • Bake for about 15 minutes, until the cod flakes easily with a fork and the topping is golden.

Serving

  • Squeeze fresh lemon juice over the baked cod before serving.
  • Serve with a side of bread, rice, mashed potatoes, or polenta.

Notes

For an optional kick, add chili flakes to the cheese mixture. You can also use other fish, such as tilapia or haddock.
