Instructions
 

Marinating the Shrimp

  • In a small bowl, combine the fresh lemon juice, olive oil, paprika, onion powder, dried oregano, minced garlic, lemon zest, salt, and black pepper to create the marinade.
  • Pour the marinade over the shrimp in a bowl, tossing gently until well-coated. Reserve about 2 tablespoons of marinade for brushing later.
  • Allow the shrimp to marinate for at least 30 minutes to absorb the flavors.

Assembling the Skewers

  • Thread a shrimp onto a skewer, followed by a slice of zucchini, then a cube of red onion. Repeat this process until the skewers are filled, alternating the ingredients.

Broiling the Skewers

  • Preheat your oven broiler to high and arrange the skewers on a baking rack or pan.
  • Broil for 3-5 minutes on each side until the shrimp turns pink and opaque. Keep an eye on them to ensure they don't burn.
  • After removing from the oven, brush the reserved marinade over the skewers for extra flavor.
  • Garnish the skewers with fresh dill and lemon wedges before serving.

Notes
