Ingredients
  

Crust

  • 1.5 cups crushed graham crackers
  • 0.25 cups melted butter Adds richness to the crust.

Cheesecake Filling

  • 8 oz mascarpone cheese Creamy and smooth.
  • 1 cup cream cheese Rich and tangy.
  • 0.5 cups sugar Sweet and inviting.
  • 2 pieces eggs Binds the textures.
  • 0.5 cups fresh orange juice Zesty and refreshing.
  • 1 piece zest of 1 orange Adds aromatic flair.
  • 0.5 tsp vanilla extract Warm and inviting.

Topping

  • 0.5 cups dark chocolate chips Deep and luscious.
  • 0.25 cups heavy cream Silky and luscious.

Instructions
 

Preparation of Crust

  • In a mixing bowl, combine crushed graham cracker crumbs with melted butter until it resembles wet sand.
  • Firmly press the mixture into the bottom of a springform pan.
  • Preheat oven to 350°F (175°C) and bake the crust for about 8 minutes until golden.

Making the Cheesecake Filling

  • In a large bowl, beat mascarpone cheese, cream cheese, and sugar until smooth and creamy.
  • Add eggs one at a time, blending well after each addition.
  • Incorporate fresh orange juice and zest, followed by vanilla extract.
  • Pour the mixture over the baked crust and spread out evenly.

Baking

  • Lower oven temperature to 325°F (160°C) and bake for 45-50 minutes, until the edges are set and the center is slightly jiggly.
  • Turn off oven and let cheesecake sit for an additional hour.
  • Transfer to a wire rack to cool completely, then refrigerate for at least four hours or overnight.

Preparing the Ganache

  • In a small saucepan, heat heavy cream on medium until just about to simmer.
  • Pour hot cream over dark chocolate chips and let it sit for a couple of minutes before stirring until smooth.

Serving

  • Once cheesecake is chilled, drizzle ganache over the top in swirls.
  • Serve with fresh berries or whipped cream if desired.

Notes

Avoid overbaking for a creamy texture. Keep all ingredients at room temperature and do not open the oven door frequently during baking.
