Ingredients

Main Ingredients

  • 8 oz short pasta (penne or rotini)
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning (about 1 oz)
  • 1 can (14.5 oz) diced tomatoes with juice
  • 1 cup low-sodium chicken broth
  • 1 cup shredded cheddar cheese
  • 1 can (15 oz) black beans, rinsed and drained

Instructions

Cooking Steps

  • In a large pot over medium heat, brown the ground meat for about 5 minutes until it's perfectly sizzled and aromatic.
  • Stir in the taco seasoning, allowing the spices to envelop the meat and combine with the heat.
  • Add the diced tomatoes and black beans; cook for an additional 2 minutes.
  • Pour in the pasta and chicken broth, stirring to coat the noodles evenly.
  • Bring everything to a boil, then reduce the heat to low, cover, and simmer for about 10 minutes until the pasta is al dente.
  • Remove the pot from the heat and mix in the shredded cheddar cheese until it melts.
  • Serve hot, garnished with fresh cilantro or creamy avocado slices, if desired.

Notes

For healthier alternatives, consider swapping ground beef for lean turkey or plant-based protein, and using whole wheat or lentil pasta.
