Preparation

  • Mix the graham cracker crumbs with the melted butter in a bowl, stirring until every crumb is coated.
  • Press the mixture into the bottom of your jars to form an even crust.
  • In a separate bowl, beat the softened cream cheese, powdered sugar, and key lime juice until smooth.
  • Whip the heavy cream with vanilla extract until stiff peaks form.
  • Fold the whipped cream into the cream cheese mixture gently.
  • Layer the cheesecake mixture over the crust in the jars, filling them to the brim.
  • Refrigerate for at least four hours before serving.
  • Before serving, add a sprinkle of lime zest on top.
