Ingredients
  

For the Cake

  • 1 box chocolate cake mix
  • 1/2 cup vegetable oil
  • 3 large eggs for cake batter
  • 1 cup water

For the Cheesecake Layer

  • 2 packages cream cheese softened
  • 1 cup granulated sugar
  • 2 large eggs for cheesecake layer
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon mint extract
  • 1/4 cup sour cream

For the Fudge Topping

  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract for fudge
  • 1/4 cup crushed mint chocolate candies for garnish

Optional Garnish

  • a few leaves fresh mint for decoration

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease and flour a 9-inch springform pan.

Making the Cake Layer

  • Prepare the chocolate cake mix according to the package instructions and pour the batter into the prepared pan.
  • Bake for 20-25 minutes, checking with a toothpick until it comes out clean. Allow the cake to cool completely.

Making the Cheesecake Layer

  • In a large mixing bowl, beat the softened cream cheese and granulated sugar until smooth.
  • Add the eggs one at a time, mixing well after each addition, followed by vanilla and mint extracts.
  • Stir in the sour cream until well combined.
  • Pour the cheesecake batter over the cooled cake layer and bake for 35-40 minutes, or until set but still slightly jiggles in the center.

Cooling

  • Turn off the oven and leave the cake inside with the door slightly ajar for 1 hour to cool gradually.
  • Transfer the cake to the refrigerator and chill for at least 3 hours, preferably overnight.

Making the Fudge Layer

  • In a microwave-safe bowl, melt together the chocolate chips and heavy cream, stirring every 30 seconds until smooth.
  • Add the vanilla extract to the melted mixture and mix well.
  • Pour the fudge over the chilled cheesecake, spreading it evenly and return to the refrigerator for 30 minutes to set.

Serving

  • Garnish with crushed mint chocolate candies and fresh mint leaves before serving.

Notes
