Mint Whipped Cream Ingredients

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Prepare a 15x10-inch jelly roll pan by lining it with parchment paper.
  • In a bowl, whisk together flour, cocoa powder, baking powder, and salt.
  • In another bowl, beat eggs and sugar until light and fluffy. Add oil and vanilla, mixing until combined.
  • Gradually fold in the dry ingredients to the wet mixture until fully incorporated.
  • Pour the batter into the prepared pan and spread evenly. Bake for 10-12 minutes until the cake springs back when touched.
  • Once baked, remove the cake and let it cool slightly. Carefully turn it onto a powdered sugar dusted towel. Roll the cake tightly in the towel and let it cool completely.

Filling and Ganache

  • While the cake cools, whip the heavy cream with powdered sugar until soft peaks form. Add peppermint extract and food coloring, whipping until stiff peaks form.
  • For the ganache, heat heavy cream in a saucepan until simmering. Pour it over chocolate chips and stir until smooth.

Assembly

  • Unroll the cake and spread the mint whipped cream evenly over the surface. Roll back up carefully, seam-side down.
  • Drizzle ganache over the top and garnish with chocolate chips and mint leaves.
  • Chill for at least 1 hour before slicing and serving.

Notes

For better results, use room temperature eggs, gently fold dry ingredients, and keep whipped cream chilled. Customize decorations with crushed cookies or chocolate drizzles.
