  • 1 lb ground beef or chicken Your choice of meat.
  • 1 cup corn kernels You can use fresh, frozen, or canned corn.
  • 1 can black beans, drained and rinsed (15 oz) Make sure to drain well to avoid sogginess.
  • 1 can diced tomatoes with green chilies (10 oz) Adds a spicy kick.
  • 1 onion chopped
  • 1 packet taco seasoning Use your favorite brand.
  • 1 cup shredded cheddar cheese The more cheese, the better!
  • 1 cup shredded Monterey Jack cheese A great complement to the cheddar.
  • 1/2 cup sour cream Can be replaced with Greek yogurt.
  • 1/4 cup chopped green onions For garnish and flavor.
  • 1 cup tortilla chips, crushed Adds a delightful crunch.
  • 1 tbsp olive oil For sautéing.

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent.
  • Add the ground beef or chicken, cooking until it’s well-browned, about 5–7 minutes.
  • Stir in the taco seasoning, black beans, diced tomatoes with green chilies, and corn. Let it simmer for about 5–7 minutes.
  • In a greased baking dish, layer the beef mixture evenly.
  • Sprinkle a generous amount of crushed tortilla chips on top.
  • Top generously with shredded cheddar and Monterey Jack cheeses.
  • Bake for 15–20 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and finish with dollops of sour cream and chopped green onions.
  • Let it cool for a few minutes before serving.

Notes

Drain black beans and diced tomatoes well to avoid sogginess. Consider adding sautéed bell peppers for extra flavor. For a spicier dish, add jalapeños or hot sauce.
