  • 2 lb salmon filet Fresh and succulent, the star of the dish.
  • 1 Tbsp avocado oil Healthy fat that adds moisture.

  • 1 tsp garlic powder Adds an aromatic punch.
  • 1/2 whole red onion, finely chopped Sweet and slightly tangy.
  • 1 8.5-oz jar sun-dried tomatoes, drained and chopped Bursting with concentrated flavor.
  • 5 oz baby spinach Fresh and vibrant.
  • 6 oz feta cheese crumbles Creamy and tangy.
  • 1/3 cup pesto sauce (optional) Basil-infused kick.

Instructions
 

Preparation

  • Preheat your oven to 400 degrees Fahrenheit.
  • Place the salmon filet on a parchment-lined baking sheet.
  • Drizzle the salmon generously with avocado oil, coating it evenly.
  • Season the salmon with sea salt and garlic powder.

Baking Salmon

  • Bake the salmon in the middle of the oven for 10 minutes.
  • While the salmon is baking, heat a skillet on medium heat and add a little more avocado oil.
  • Add the finely chopped red onion and sauté until soft and translucent.
  • Add the sun-dried tomatoes and baby spinach, cover, and cook until the spinach wilts.
  • Mix in the feta cheese and stir gently until slightly melted.
  • Remove the salmon from the oven and top it evenly with the spinach mixture.
  • Return the salmon to the oven and bake for an additional 8-10 minutes or until it reaches an internal temperature of 145 degrees Fahrenheit.

Serving

  • If using, drizzle pesto sauce over the salmon once removed from the oven.
  • Allow the salmon to rest for a few minutes before serving.

Notes

For optimal flavor, marinate the salmon in lemon juice and herbs before baking. Consider substituting feta for goat cheese or using crushed red pepper flakes for heat.
