Filling Ingredients

  • 1 cup feta cheese, crumbled The star of the filling.

  • 1 tbsp lemon zest Adds a subtle zing.

Cooking Ingredients

  • 1 tbsp olive oil (for brushing) Creates a golden crust.

Instructions
 

Prepare the Dough

  • Mix 2 cups of all-purpose flour, 1 tsp of salt, and 1 tsp of baking powder in a mixing bowl.
  • Gradually add in 3/4 cup of warm water and 2 tbsp of olive oil, stirring until it forms a cohesive dough.

Knead and Rest

  • Knead the dough on a lightly floured surface until smooth and elastic.
  • Cover with a clean cloth and let it rest for about 30 minutes.

Make the Filling

  • In a separate bowl, combine 1 cup of crumbled feta cheese, 1/4 cup of chopped mint, and 1 tbsp of lemon zest.
  • Mix well to ensure flavor is evenly distributed.

Divide and Roll

  • Once the dough has rested, divide it into small balls, about the size of a golf ball.
  • Roll each ball into a thin circle.

Fill and Seal

  • Place a spoonful of the feta-mint mixture in the center of each circle.
  • Fold the dough over the filling to create a semi-circle and pinch the edges to seal tightly.

Cook

  • Heat a skillet over medium-high heat and brush it with a little olive oil.
  • Cook the stuffed flatbreads for 2-3 minutes on each side until golden brown and crispy.

Garnish and Serve

  • Sprinkle fresh parsley over the flatbreads and serve warm.

Notes

You can customize the filling with sun-dried tomatoes or olives. Substitute fresh mint with basil or parsley if unavailable. Prepare dough ahead of time for convenience.
