Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large mixing bowl, combine the ground meat with breadcrumbs, Parmesan cheese, parsley, beaten egg, minced garlic, salt, pepper, and Italian seasoning. Mix until unified and shape into meatballs about 1 inch in diameter.
  • Place the meatballs on a baking sheet lined with parchment paper.

Potato Preparation

  • In another large bowl, toss the diced potatoes with olive oil, garlic powder, salt, and pepper.
  • Arrange the seasoned potatoes evenly on another baking sheet.

Cooking

  • Bake the meatballs for about 20 minutes and the potatoes for around 25-30 minutes until both are cooked through and golden-brown.
  • Combine the meatballs and roasted potatoes in a large baking dish and sprinkle with cheddar and mozzarella cheese.
  • Return to the oven for an additional 5-10 minutes, or until the cheese melts and bubbles.
