For the Meatballs

For the Sauce

  • 2 tbsp olive oil For sautéing
  • 1/2 cup chicken broth Base for the sauce
  • 1 cup heavy cream Creates a rich sauce
  • 1/4 cup chopped sun-dried tomatoes Adds a tangy flavor
  • 1 tsp Italian seasoning For flavor
  • 1/2 tsp red pepper flakes Optional for a spicy kick
  • 1/4 cup grated Parmesan cheese Added at the end for creaminess

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, parsley, egg, minced garlic, salt, and pepper.
  • Mix everything gently using your hands until just combined.
  • Form the mixture into meatballs approximately 1 1/2 inches in size and place them onto a parchment-lined baking sheet.

Cooking

  • Bake the meatballs for 15-18 minutes, or until golden brown and cooked through.
  • While baking, heat olive oil in a skillet over medium heat.
  • Sauté the remaining minced garlic for 1-2 minutes until fragrant.
  • Add the chicken broth and heavy cream, stirring to combine.
  • Mix in the sun-dried tomatoes, Italian seasoning, and red pepper flakes.
  • Allow the sauce to simmer for 4-5 minutes until thickened.
  • Stir in the remaining Parmesan cheese until creamy.
  • Gently toss the cooked meatballs in the sauce for 2-3 minutes.

Serving

  • Serve hot, garnished with extra parsley and Parmesan.

Notes

For best results, chill ground chicken before mixing and do not rush the cooking process. Consider serving with mashed potatoes, rice, or a fresh salad.
