Preparation

  • Preheat the Oven: Begin by preheating your oven to 325°F (160°C).
  • Prepare the Crust: In a mixing bowl, combine the graham cracker crumbs, melted butter, sugar, and finely chopped pistachios. Mix well until it resembles wet sand. Press this mixture firmly into the bottom of a 9-inch springform pan.
  • Bake for about 10 minutes, then set aside to cool.

Cheesecake Filling & Baking

  • In a large mixing bowl, beat the softened cream cheese, sour cream, and sugar together until it’s smooth and creamy.
  • Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, lemon juice, lime juice, lemon zest, and lime zest until completely combined.
  • Pour the cheesecake batter over your prepared crust and bake for 55-60 minutes, or until the edges are set but the center has a slight jiggle.
  • Turn off the oven and let the cheesecake cool inside with the door slightly ajar for an hour. Chill in the refrigerator for at least 4 hours, preferably overnight.

Cherry Topping Preparation

  • In a saucepan over medium heat, combine the pitted and halved cherries, sugar, and lemon juice. Cook while stirring occasionally for about 5-7 minutes.
  • In a small bowl, mix the cornstarch with 1 tablespoon of cold water to create a slurry. Stir this into the cherry mixture and cook until thickened, about 2 minutes.
  • Remove from heat and let it cool completely.

Assembly and Serving

  • Once the cheesecake has chilled and firmed up, spread the cooled cherry topping evenly over the top.
  • Garnish with additional chopped pistachios before serving.

Notes

For storing, keep any leftovers in an airtight container in the refrigerator for up to 5 days. This cheesecake can be made a day in advance, enhancing the flavors as they meld together.
