Instructions

Preparation

  • Preheat your oven to 425°F (220°C), ensuring a perfectly crispy finish.
  • Wash and peel the russet potatoes if you prefer, then cut them into even-sized fries for a uniform cooking experience. Pat them dry with a paper towel, removing any excess moisture.
  • In a large bowl, toss the cut fries with olive oil until they are evenly coated.
  • Add the Cajun seasoning, garlic powder, paprika, black pepper, and salt to the fries. Toss everything together again.

Baking

  • Spread the seasoned fries evenly on a baking sheet lined with parchment paper. Bake for 30-35 minutes, flipping halfway through until they turn golden and crispy.

Making Voodoo Sauce

  • While the fries are baking, prepare the voodoo sauce by combining mayonnaise, ketchup, hot sauce, Dijon mustard, lemon juice, smoked paprika, minced garlic, and cayenne (if using) in a small bowl. Stir until well incorporated.

Serving

  • Once the fries are done, remove them from the oven and transfer them to a serving platter. Drizzle the voodoo sauce over the fries or serve it on the side for dipping.
  • Garnish with chopped parsley for added freshness and serve immediately.

Notes

Cut potatoes into uniform sizes to ensure even cooking. Soak fries in cold water for about 30 minutes before roasting for crispiness. Adjust spice levels in the Voodoo sauce according to your preference.
