Preparation

  • Preheat your oven to 350°F (175°C). Grease your cake pans and line the bottoms with parchment paper.

  • Gradually add the eggs, one at a time, mixing well after each addition. Then stir in the vanilla extract, fresh lime juice, and lime zest.
  • Alternately add the dry ingredients and buttermilk into the butter mixture, starting and ending with the flour mixture. Mix until smooth.

Baking

  • Divide the batter evenly between the prepared cake pans. Bake for 25 to 30 minutes or until a toothpick comes out clean.
