For the Avocado Salsa

  • 2 medium ripe but firm avocados, chopped For creaminess and texture.

Preparation

  • In a small bowl, whisk together the rub ingredients: olive oil, lime juice, lime zest, chili powder, brown sugar, salt, cumin, smoked paprika, onion powder, garlic powder, chipotle powder (if using), and pepper.
  • Evenly apply the marinade to the chicken breasts, ensuring each piece is well-coated. Let the chicken marinate for at least 30 minutes at room temperature or refrigerate for up to 8 hours for deeper flavor.
  • If refrigerating, remember to bring it to room temperature before cooking.

Cooking

  • For stovetop preparation, heat a grill pan or skillet over medium-high heat. Lightly grease the surface, then place the chicken breasts in the pan.
  • Cook for 3-5 minutes on one side until browned. Flip the chicken, cover, and reduce the heat to medium.
  • Cook for an additional 5-7 minutes until the chicken reaches an internal temperature of 165°F (75°C). Let the chicken rest for about 5 minutes before slicing.
  • If grilling, preheat the grill to medium heat (375-450°F). Grill the chicken for 5-7 minutes per side, until fully cooked.
  • Again, allow it to rest for 5 minutes after cooking to retain its juices.

Avocado Salsa Preparation

  • In a medium bowl, mix together all the ingredients for the salsa except for the avocados, allowing the flavors to combine.
  • Before serving, gently fold in the chopped avocados and adjust the seasoning to your preference.

Notes

For a creative spin, consider adding diced mango or pineapple to the salsa for a tropical flair. Serve with warm tortillas or over rice for a heartier meal.
