Instructions
 

Preparation

  • Preheat your oven to 325°F (163°C).
  • Grease a 9-inch springform pan with butter and line the bottom with parchment paper.
  • Mix together the graham cracker crumbs, sugar, and melted butter until combined. Press this mixture evenly into the bottom of the prepared pan to form the crust.
  • Bake the crust for 10 minutes, then set aside to cool.

Making the filling

  • In a large bowl, beat the softened cream cheese with 1 cup of sugar until smooth and creamy, about 3 minutes.
  • Add vanilla extract, lemon juice, lime juice, lemon zest, and lime zest. Mix until well combined.
  • Add eggs one at a time, beating well after each addition. Stir in the chopped pistachios and cherries gently.

Baking

  • Pour the cheesecake batter into the cooled crust and smooth the top with a spatula.
  • Bake for 50-60 minutes, or until edges are set and the center is slightly jiggly.
  • Turn off the oven and let the cheesecake sit in the oven for an additional hour.

Cooling

  • Allow the cheesecake to cool to room temperature, then refrigerate for at least 4 hours or overnight.
  • Before serving, top with whipped cream and garnish with whole cherries and chopped pistachios.
