For the Garlic Orzo

  • 1 cup orzo pasta small, rice-shaped pasta.
  • 2 tbsp olive oil ensuring a smooth coating.
  • 2 cloves garlic, minced fragrant and vibrant.
  • 1/4 tsp red pepper flakes (optional) introducing a hint of warmth.
  • 1 tbsp lemon juice brightening the dish.
  • 2 tbsp fresh parsley, chopped adding freshness.
  • Salt and pepper, to taste crucial for rounding out the flavors.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, combine ground chicken, ricotta cheese, egg, breadcrumbs, Parmesan cheese, lemon zest, lemon juice, minced garlic, oregano, salt, and pepper.
  • Gently mix with your hands until just combined. Avoid overmixing.
  • Form the mixture into generously sized meatballs, roughly 1 ½ inches across.
  • Nestle them onto a parchment-lined baking sheet and drizzle with olive oil.

Cooking

  • Bake the meatballs in the preheated oven for about 20–25 minutes until golden brown.
  • While the meatballs bake, cook orzo pasta according to package instructions.
  • In a sauté pan over medium heat, heat olive oil and add minced garlic, cooking for 1-2 minutes.
  • Add the cooked orzo, red pepper flakes (if using), lemon juice, parsley, salt, and pepper. Toss everything together until heated through.

Serving
