  • 4 filets boneless sole filets Tender and delicate
  • 1/2 cup flour For a light and crispy coating
  • 8 tablespoons butter Divided for rich flavor
  • 1/2 cup fresh chopped parsley Fresh and aromatic
  • 2 tablespoons capers Briny bursts of flavor
  • Juice from 1/2 lemon lemon Reserve remaining lemon for garnish

Instructions
 

Preparation

  • Liberally season the boneless sole filets with salt and pepper on both sides.
  • Lightly dredge each filet in flour, pressing gently to coat both sides.

Cooking

  • In a large skillet, melt 4 tablespoons of butter over medium-high heat until it foams.
  • Add the floured filets to the pan and cook for about 2 minutes on one side.
  • Carefully flip each filet and cook for another 2 minutes until golden brown and cooked through.
  • Transfer the filets to a serving plate and cover with foil to keep warm.
  • In the same skillet, add the remaining butter, fresh lemon juice, and half of the chopped parsley. Whisk until the butter melts into a sauce.

Serving

  • Plate the filets, drizzling the lemon-caper sauce generously over each piece.
  • Top with remaining parsley, sprinkle capers, and add lemon slices for garnish.

Notes

For the best flavor, use fresh lemon juice and parsley. Substitute sole with other mild, flaky fish if needed. Adjust sauce consistency with water or lemon juice if thick. Add red pepper flakes for heat or pine nuts for crunch. Serve with sides like sautéed green beans or quinoa.
