Pasta and Cheese

  • 8 oz broken lasagna noodles The star of the soup.
  • 1 cup ricotta cheese Adds creamy element.

Instructions
 

Cooking the Base

  • In a large pot or Dutch oven, heat over medium heat until hot. Add the ground beef (or sausage) to the pot and cook until browned, draining any excess fat.
  • Add the chopped onion and minced garlic to the pot. Sauté for about 3-4 minutes until softened and aromatic.

Building the Flavor

  • Stir in the crushed tomatoes, beef broth, water, tomato paste, oregano, basil, red pepper flakes (if using), along with salt and pepper. Raise the heat to medium-high and bring to a simmer.

Cooking Noodles

  • Once simmering, add the broken lasagna noodles and cook for about 8-10 minutes until the noodles are tender.

Preparing the Cheese Mixture

  • In a small bowl, mix ricotta, mozzarella, and Parmesan cheese until creamy and well combined. Set aside.

Serving

  • Ladle the soup into bowls and top with a spoonful of the cheese mixture. Stir together for delicious, creamy bites. Finish with fresh basil or parsley.

Notes

To elevate the soup, add balsamic vinegar or chopped vegetables like bell peppers or mushrooms. For leftovers, flavors improve the next day. Store in an airtight container for up to 3-4 days.
