  • Add the eggs one by one, beating gently after each addition until just blended. Stir in the sour cream.

Baking

  • Pour the filling over the prepared crust, smoothing the top with a spatula.
  • Bake for 55-60 minutes, until the center is mostly set but still slightly wobbly.
  • Turn off the oven and crack the door open slightly, allowing the cheesecake to cool inside for about an hour.
