Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  • Incorporate the egg and vanilla extract into the butter mixture and blend well.
  • In a separate bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry ingredients into the wet mixture and mix until just combined.
  • Roll the dough into 1-inch balls and place them onto the prepared baking sheet with 2-inch spacing.
  • Press your thumb into the center of each cookie to create a small indentation.

Filling Preparation

  • In a medium bowl, whisk together the brown sugar, corn syrup, melted butter, egg, and vanilla until smooth.
  • Stir in the chopped pecans.

Baking

  • Spoon about 1 teaspoon of the pecan pie filling into the center of each cookie.
  • Bake for 10-12 minutes, or until the edges are lightly golden.
  • Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

For a gourmet touch, consider toasting the pecans before chopping. Add a pinch of cinnamon or nutmeg for extra warmth, or dip half of the cookies in melted chocolate for indulgence. If they appear undercooked, bake a couple more minutes as they solidify while cooling.
