  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese

  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder

  • 2 tbsp chopped fresh parsley For added flavor and color
  • 1/4 cup breadcrumbs For coating the puffs
  • Oil for frying Use a neutral oil like vegetable or canola

Preparation

  • In a large mixing bowl, combine the cooled mashed potatoes, shredded cheddar cheese, grated Parmesan, eggs, flour, garlic powder, onion powder, salt, and pepper. Mix until well combined into a cohesive dough-like consistency.
  • Stir in the chopped parsley for additional flavor.
  • Using your hands, form the mixture into small balls or puffs, about 1 inch in size.
  • Roll each puff in breadcrumbs until evenly coated.

Cooking

  • Heat oil in a deep frying pan over medium heat.
  • Carefully fry the potato puffs in batches for approximately 3-4 minutes until they are golden brown and crispy on all sides.
  • Remove the puffs from the oil and drain on a paper towel to absorb any excess oil.

Notes

For an extra crunchy texture, double-coat the puffs by rolling them in flour before dipping in beaten eggs, then again in breadcrumbs. You can add crispy bacon bits or finely chopped vegetables into the mixture, and consider different types of cheese for variations.
