Instructions
 

Preparation

  • Place the sliced strawberries in a medium bowl and sprinkle the granulated sugar over them. Toss gently to coat.
  • Let strawberries sit for about 10 to 15 minutes to release their juices.
  • Add lemon juice and vanilla extract to the strawberries and stir gently to combine.
  • If using cornstarch, mix it with the 2 tablespoons of water until well dissolved.
  • Add the cornstarch mixture to the strawberries and stir until incorporated.

Cooking

  • Transfer the strawberry mixture to a small saucepan over medium heat.
  • Cook for about 5 to 7 minutes, stirring gently until the mixture bubbles softly and thickens to your desired consistency.
  • Remove from heat and let it cool completely before using.

Serving

  • Spoon the homemade strawberry topping over your favorite cheesecake and enjoy!
