Ingredients

Base ingredients

  • 2 cups heavy cream Rich and decadent to ensure a creamy texture
  • 1 cup whole milk Adds smoothness
  • 3/4 cup granulated sugar Sweetens the base
  • 1 teaspoon vanilla extract Deepens the flavor profile
  • 1 cup Baileys Irish Cream Brings velvety richness
  • 1/4 cup cocoa powder Adds chocolatey depth

Instructions

Preparation

  • In a medium saucepan, combine the heavy cream, whole milk, and granulated sugar. Heat over medium heat, stirring occasionally until the sugar dissolves and the mixture is warm but not boiling.
  • In a small bowl, whisk the cocoa powder with a small amount of the warm milk mixture until smooth. Add it back into the saucepan and stir to combine.
  • Remove the saucepan from heat, then stir in the vanilla extract and Baileys Irish Cream until well mixed.
  • Allow the mixture to cool to room temperature, then refrigerate for at least 2 hours or overnight.

Churning

  • Once chilled, pour the mixture into your ice cream maker and churn according to the manufacturer's instructions, typically for about 20-25 minutes until soft-serve consistency.

Freezing

  • Transfer the ice cream to an airtight container and freeze for at least 4 hours until firm.
  • Serve and enjoy your homemade Baileys ice cream!

Notes

For best results, use high-quality cocoa powder and consider adding a pinch of sea salt. Mix-ins like crushed chocolate cookies or nuts can add delightful texture.
