Preparation

  • Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans with butter and dust with flour or line with parchment paper.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  • In a large bowl, use a mixer to cream together the softened butter and granulated sugar until light and fluffy.
  • Add the eggs one at a time, incorporating each before adding the next. Stir in the vanilla extract.
  • Mix in the crushed pineapple and milk until combined. Gradually add the dry ingredients until just combined, then fold in the melted white chocolate chips.
  • Divide the batter evenly between the prepared cake pans and smooth the tops.

Baking

  • Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  • Let the cakes cool in the pans for about 10 minutes before transferring to a wire rack to cool completely.

Frosting

  • Beat the cream cheese and powdered sugar together until smooth. Add the heavy cream and vanilla extract, and beat until thick and fluffy.
  • Gently fold in the melted white chocolate chips until incorporated.
  • Once the cakes are completely cool, place one layer on a serving plate and spread a generous layer of frosting. Top with the second layer and frost the entire cake.
  • Garnish with white chocolate shavings or pineapple slices if desired.

Notes

For best results, ensure all ingredients are at room temperature. Don't rush the baking time, and cool completely before frosting to avoid melting.
