Instructions
 

Making the White Chocolate Mousse

  • Melt the white chocolate chips in a microwave-safe bowl, heating in 20-second intervals and stirring in between until completely melted. Set aside to cool slightly.
  • In a separate mixing bowl, whip the heavy cream until stiff peaks form.
  • In another bowl, beat together the softened mascarpone cheese, powdered sugar, and vanilla extract until smooth.
  • Combine the slightly cooled melted white chocolate with the mascarpone mixture, mixing gently until well combined.
  • Fold the whipped cream into the chocolate and mascarpone mixture gently to keep it airy.

Assembling the Parfaits

  • If using graham cracker crumbs, sprinkle a layer at the bottom of each serving glass.
  • Spoon the white chocolate mousse into each glass, filling halfway.
  • Layer in fresh raspberries, then add more mousse until the glasses are filled, finishing with a layer of mousse.
  • Garnish with fresh raspberries and mint leaves.
  • Refrigerate the parfaits for at least 2 hours before serving to allow flavors to meld.

Notes

Experiment with different layers or substitute raspberries with other berries. Drizzle raspberry sauce between layers for extra sweetness.
