Instructions
 

Make the White Chocolate Mousse

  • Place 8 oz of chopped white chocolate in a heatproof bowl over a double boiler. Stir occasionally until silky smooth. Allow to cool slightly.
  • In a separate bowl, whip 1 1/2 cups of heavy cream until stiff peaks form.
  • Gently fold the cooled chocolate and 1 tsp of vanilla extract into the whipped cream.

Prepare the Raspberry Layer

  • In a saucepan, combine 1 cup of fresh raspberries, 1 tbsp of sugar, and 1 tsp of lemon juice. Cook over low heat until slightly syrupy, about 5-7 minutes.
  • Let the raspberry mixture cool.

Assemble the Parfait

  • Layer crushed graham crackers at the base of your serving glasses.
  • Add a scoop of the raspberry mixture, followed by the white chocolate mousse.
  • Repeat layers until the glasses are filled.

Chill the parfaits

  • Cover the glasses with plastic wrap and chill in the refrigerator for at least 2 hours.
