  • 1 lb hot Italian sausage for a savory depth
  • 6 cups reduced sodium chicken stock provides a flavorful base
  • 6 pieces russet potatoes, cubed cut into 1/2 inch cubes
  • 1/2 tsp kosher salt for seasoning
  • 1/2 tsp crushed red pepper flakes adds kick
  • 4 cups chopped kale offers vibrant color
  • 1 cup heavy cream for a creamy finish

Instructions
 

Preparation

  • Warm a Dutch oven or 6-quart pot over medium-high heat.
  • Add the Italian sausage to the pot and cook until browned and fully cooked, breaking it up as needed.
  • Drain the sausage drippings from the pan.
  • Return the pot to the heat and add in the chicken stock, cubed potatoes, salt, and crushed red pepper flakes. Bring to a boil.
  • Boil until the potatoes are fork-tender, about 15 minutes.
  • Remove 1 cup of cooked potatoes and mash them in a bowl, then return to the pot to thicken the soup.
  • Stir in the chopped kale and heavy cream, allowing to combine.
  • Continue cooking until the kale is wilted, about 3 more minutes.
  • Taste and adjust seasoning with additional salt and red pepper flakes.

Notes

For enhanced flavor, consider adding fresh herbs like thyme or rosemary. Optional extras such as canned cannellini beans can provide additional protein and creaminess. Finish with fresh parsley or a drizzle of balsamic vinegar.
