  • 2 sticks celery, chopped
  • 1 medium carrot, chopped
  • 1/4 cup green onion, finely chopped, plus more for garnish
  • 2 cloves garlic, minced
  • 1/3 cup flour
  • 2 tablespoons flour
  • 1 cup heavy whipping cream
  • 5-6 cups homemade shrimp stock
  • 2 lb raw jumbo shrimp, peeled, deveined, and chopped
  • 4 slices rustic or French bread, cubed and toasted

Preparation

  • Begin by melting the butter in a large pot over medium heat.
  • Add the chopped celery, carrot, and green onion. Sauté for about 5 minutes until soft.
  • Introduce the minced garlic and stir for another minute.
  • Sprinkle in the flour, stirring continuously to avoid lumps.
  • Gradually incorporate the heavy whipping cream, ensuring a smooth mixture.
  • Pour in the homemade shrimp stock and cook until thickened, about 10 minutes.
  • Add the chopped shrimp. Bring to a gentle boil, then lower the heat and let it simmer for another 10 minutes.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with toasted cubed bread and extra green onions.

Notes

Use homemade shrimp stock for better flavor. For a lighter version, substitute half-and-half for heavy cream. Adding smoked paprika or lemon juice enhances flavor. Store in the fridge for up to 3 days or freeze for up to 3 months.
