Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease and flour a 9×13-inch baking dish.
  • In a large bowl, combine the yellow cake mix, crushed pineapple (with juice), eggs, and vegetable oil. Stir gently until just combined.
  • Fold in the shredded coconut and chopped pecans (if using).
  • Pour the batter into the prepared baking dish, smoothing the top with a spatula.

Baking

  • Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

Frosting

  • While the cake is baking, prepare the frosting by beating together the softened cream cheese and butter until smooth.
