  • 1 lb ground beef cooked to perfection
  • 1 small onion, finely chopped adding a delightful sweetness

  • 1 can (15 oz) tomato sauce rich and tangy
  • 1 can (14 oz) diced tomatoes, drained adding freshness
  • 1 cup frozen peas for a pop of color and nutrition
  • 1.5 cups cooked pasta (elbow macaroni or rotini) providing texture
  • 1 cup shredded cheddar cheese for creaminess
  • 1 cup shredded mozzarella cheese for that gooey goodness
  • 1 tsp dried oregano infusing the dish with herbaceous notes
  • 0.5 tsp salt to enhance the flavors
  • 0.5 tsp black pepper for a hint of spice
  • 1 tbsp olive oil for sautéing
  • 1 cup crushed potato chips or breadcrumbs adding crunch
  • 1 tbsp melted butter for a golden topping

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, heat the olive oil over medium heat. Add the ground beef and cook until browned.
  • Add the chopped onion and minced garlic to the skillet; sauté for 2-3 minutes until the onion is soft and translucent.
  • Stir in the tomato sauce, diced tomatoes, frozen peas, oregano, salt, and pepper. Bring to a gentle simmer.
  • In a large mixing bowl, combine the cooked pasta with the beef mixture, stirring until well combined.
  • Pour the mixture into a greased 9x13-inch baking dish, leveling it off with a spatula.
  • Sprinkle the shredded cheddar and mozzarella cheeses on top.
  • In a small bowl, mix crushed potato chips (or breadcrumbs) with melted butter, then sprinkle over the cheese.
  • Bake for 25-30 minutes or until the cheese is bubbly and the topping is golden brown.
  • Remove from the oven and let cool for about 5 minutes before serving.

Notes

Add more veggies for nutrition. Swap cheeses for different flavors. This casserole can be made ahead and stored in the refrigerator. Reheat leftovers in the microwave or oven.
