  • 1 small onion, thinly sliced Sweet and tender when caramelized
  • 1 tbsp olive oil For perfect roasting

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C) for roasting the mushrooms and onions.
  • In a mixing bowl, toss the sliced mushrooms and onions with olive oil, salt, and pepper.

Roasting

  • Spread the seasoned vegetables evenly on a baking sheet and roast in the oven for about 15-20 minutes until golden and tender.

Grilling

  • Heat a skillet over medium heat.
  • Generously butter one side of each slice of bread.
  • Place one slice of bread, buttered side down, in the skillet and sprinkle shredded Gouda cheese on top.
  • Layer the roasted mushrooms and onions on top of the cheese, then place the second slice of bread on top, buttered side facing up.
  • Grill the sandwich for about 3-4 minutes on each side, pressing down gently with a spatula until the bread is golden brown and the cheese is melted.

Serving

  • Once done, remove the sandwich from the skillet, slice in half, and serve warm.

Notes

Wrap leftover sandwiches in parchment paper and store in an airtight container in the fridge. Serve with sides like tomato soup or a light salad.
