Preparation

  • Arrange the sliced tomatoes in a radiant circle on a large plate or shallow dish.
  • Layer the cubed feta cheese over the tomatoes.
  • Top with the onion rings, placing them playfully on top of the feta.
  • Sprinkle the chopped parsley over the creation.
  • Drizzle the extra virgin olive oil generously over the salad.
  • Sprinkle with dried oregano, black pepper, and crushed red pepper flakes if desired.
  • Add the olives; either whole or halved based on preference.
  • If needed, add a pinch of salt, being cautious of the saltiness from the feta.

Notes

For best results, use the ripest tomatoes and the highest quality olive oil. Fresh herbs should be chopped just before use.
