  • 1 lb Thin-sliced chicken breast Tender and juicy
  • 1/4 cup Feta cheese, crumbled For a creamy texture
  • 1/4 cup Fresh chopped parsley Brightens the dish

Instructions
 

Make the Marinade

  • Gather your ingredients in a large mixing bowl. Combine the lemon zest and juice, extra virgin olive oil, finely minced garlic or garlic powder, dried oregano, smoked paprika, sea salt, and black pepper. Whisk everything together until the marinade is well combined and emulsified.
  • Reserve 1/4 cup of this marinade for later. Add the thin-sliced chicken breast to the bowl, ensuring each piece is beautifully coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.

Cook the Chicken

  • Heat a nonstick skillet over medium-high heat and drizzle some olive oil once it’s hot.
  • Place the marinated chicken into the skillet and sear until the bottom turns golden brown, about 3 to 4 minutes. Flip the chicken and cook for an additional 3 to 4 minutes until cooked through.

Finish and Serve

  • Transfer the cooked chicken to a serving plate, drizzle reserved marinade over the top, and sprinkle with chopped parsley and crumbled feta cheese.
  • Serve with additional lemon wedges on the side.

Notes

Marinade for longer than 30 minutes for deeper flavor, but avoid exceeding a few hours. Optionally, add red pepper flakes for heat. Substitute feta with dairy-free version if needed. Add vegetables like bell peppers or zucchini for a one-pan meal.
