Ingredients
  

For the Greek Chicken Meatballs

  • 1 lb lean ground chicken tender and protein-packed
  • 1/4 cup whole wheat panko crumbs adds a delightful crunch
  • 1/4 cup grated white or yellow onion sweet and aromatic
  • 2 cloves garlic, minced for depth and a hint of zest
  • 3 tablespoons fresh parsley, finely chopped vibrant herbaceous flavor
  • 1/2 piece lemon, zested for a refreshing citrus kick
  • 1 teaspoon dried oregano a classic Greek herb
  • 1/2 teaspoon ground coriander adds warmth
  • 1/2 teaspoon cumin for an earthy tone
  • 1 pinch salt enhances all flavors
  • 1 pinch pepper for a gentle spice
  • 1 large egg binds the meatballs together
  • 2 ounces feta cheese, crumbled rich, creamy, and slightly tangy

For the Tzatziki Sauce

  • 1 cup Greek yogurt creamy base
  • 1/2 cup cucumber, diced for freshness
  • 1 tablespoon dill herbaceous addition
  • 1 tablespoon lemon juice tangy brightness
  • 1 clove additional garlic, minced for flavor
  • to taste salt and pepper to taste

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C). Line a baking sheet with aluminum foil and spray with non-stick cooking spray.
  • In a large mixing bowl, combine the ground chicken, panko crumbs, grated onion, minced garlic, parsley, lemon zest, oregano, ground coriander, cumin, salt, pepper, egg, and feta cheese. Mix well.

Cooking

  • Form tablespoon-sized balls and place them on the prepared baking sheet with space in between each.
  • Bake in the preheated oven for 12-15 minutes or until golden brown and cooked through.
  • While the meatballs are baking, whisk together yogurt, cucumber, dill, lemon juice, minced garlic, salt, and pepper to make the tzatziki sauce.
  • Serve the baked meatballs hot alongside the tzatziki sauce.

Notes

For best flavor, use fresh ingredients. Meatballs can also be pan-fried for a crispy exterior. Consider doubling the recipe for meal prep or entertaining.
