Ingredients
  

For the Meatballs

  • 1 pound lean ground beef
  • 1/2 cup panko breadcrumbs
  • 1 large egg
  • 1 tablespoon steak sauce (like A1)
  • 1 tablespoon ketchup
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • to taste Salt and freshly ground black pepper

For the Gravy

  • 8 ounces mushrooms of choice, sliced (cremini recommended)
  • 3 tablespoons butter, divided
  • 2 tablespoons all-purpose flour
  • 2 cups beef broth
  • 1 tablespoon tomato paste
  • 2 teaspoons Worcestershire sauce
  • optional Chopped fresh parsley for serving

Preparation

  • Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil to prevent sticking.
  • In a large bowl, mix together the lean ground beef, panko breadcrumbs, egg, steak sauce, ketchup, Dijon mustard, onion powder, garlic powder, and a generous pinch of salt and black pepper until well combined.
  • Shape the mixture into 16 to 20 meatballs and place them evenly on the prepared baking sheet.

Cooking

  • Bake the meatballs for 16 to 20 minutes or until they are cooked through, achieving an internal temperature of 160°F (71°C).
  • While the meatballs are baking, prepare the rich mushroom gravy. In a large skillet, melt 1 tablespoon of butter over medium-high heat. Add the sliced mushrooms and cook them until they are soft and browned, about 3 to 5 minutes. Once done, transfer the mushrooms to a plate, leaving any juice in the pan.
  • In the same pan, melt the remaining butter over medium heat. Whisk in the flour until smooth, and then slowly whisk in the beef broth, tomato paste, and Worcestershire sauce. Bring this mixture to a simmer, allowing it to thicken, which should take about 3 to 5 minutes.
  • Return the sautéed mushrooms to the gravy and stir to combine. Add the baked meatballs to the gravy, allowing them to warm through for a minute or two.
  • Serve the meatballs and gravy hot, garnished with fresh chopped parsley if desired.

Notes

Opt for freshly chopped herbs such as thyme or rosemary to incorporate into the meat mixture; they add a wonderful depth of flavor. For a lighter option, substitute half of the beef with ground turkey or chicken. A splash of cream or sprinkle of cheese can enhance the gravy's richness.
