Ingredients

For the Peanut Butter Lava Filling

  • 1/2 cup unsalted butter, softened Delivers a creamy base to our batter.
  • 1 cup creamy peanut butter Provides that delectable, rich nuttiness.
  • 2 cups powdered sugar Adds sweetness and structure to the filling.
  • 1/4 cup heavy cream Gives a luscious, velvety texture.
  • 1 teaspoon vanilla extract Infuses warmth and depth into the batter.

For the Cupcake Batter

  • 1 batch cupcake batter for 12 cupcakes Either from scratch or store-bought for simplicity.

Instructions

Preparation of Peanut Butter Lava Filling

  • In a medium bowl, beat together the softened butter, creamy peanut butter, powdered sugar, heavy cream, and vanilla extract until smooth and creamy.
  • Scoop out about 1 tablespoon of this mixture, roll it into small balls, and freeze for at least 30 minutes.

Making the Cupcake Batter

  • While the peanut butter balls are freezing, prepare your favorite cupcake batter according to the package instructions.
  • Ensure you whisk it to perfection and allow it to become light and fluffy.

Assembling the Cupcakes

  • Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  • Spoon a small amount of batter into each liner, place a frozen peanut butter ball in the center, and cover it with more batter.

Baking

  • Bake according to your recipe instructions, typically about 18-20 minutes.
  • Check for doneness with a toothpick; it should come out clean except for the gooey peanut butter.

Cooling and Serving

  • Allow the cupcakes to cool in the tin for a few minutes before transferring them to a wire rack.
  • Wait before serving to let the gooey centers settle perfectly.

Notes

Avoid overfilling the cupcake liners and ensure the peanut butter centers are frozen long enough. You can also make healthier variations using natural peanut butter or almond flour.
