Golden Honey-Glazed Chicken with a Spicy Twist

Ingredients
  

For the Chicken

  • 2 lbs organic chicken (Drumsticks, Wings, or Thigh pieces)
  • 2 tsps sea salt, divided
  • 2 tsps black pepper, divided
  • 2 tsps smoked paprika, divided
  • 2 tsps garlic powder, divided
  • 2 tsps dried thyme, divided
  • 2 tsps dried parsley, divided
  • 2 tsps dried basil, divided
  • 1/2 cup organic all-purpose flour
  • 2 cups breadcrumbs
  • 2 cups cornflakes, crushed
  • 2 large eggs
  • 1 cup unsweetened almond milk
  • 2 Tbsps hot honey
  • 6 Tbsps unsalted butter

For the Sauce

  • 1/2 cup hot honey
  • 2 tsps cayenne pepper reduce for less heat
  • 1/2 tsp chili powder
  • 1/2 tsp smoked paprika for sauce
  • 1/2 tsp garlic powder for sauce
  • Pinch sea salt for sauce

Instructions
 

Preparation

  • Preheat the oven to 400°F and prepare a large baking sheet with parchment paper and a wire rack.
  • In a large bowl, combine the cleaned chicken pieces with hot honey and 1 teaspoon each of sea salt, black pepper, smoked paprika, garlic powder, dried thyme, dried parsley, and dried basil. Mix well and let it sit for 5-10 minutes.
  • Pat the chicken dry to remove excess marinade. Roll each chicken piece generously in flour, shaking off any excess.
  • In a separate bowl, mix the crushed cornflakes, breadcrumbs, and remaining spices. In another bowl, whisk the eggs and almond milk together. Dip each flour-coated piece of chicken into the egg mixture and then coat thoroughly with the breadcrumb mixture.

Cooking

  • Place the coated chicken pieces on the prepared baking sheet and bake for 30-35 minutes until golden and cooked through.
  • While the chicken bakes, melt the unsalted butter in a skillet over medium-high heat. Stir in the remaining sauce ingredients until smooth and well combined.
  • Once the chicken is baked, spoon the spicy honey sauce generously over each piece before serving.

Notes

For a more intense flavor, marinate the chicken for a few hours or overnight. Adjust cayenne pepper for less heat. For gluten-free options, use gluten-free flour and breadcrumbs. Try using fresh herbs or spices for variation.
