Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  • In a large mixing bowl, whisk together flour, baking soda, baking powder, and spices.
  • In another bowl, beat the softened butter and brown sugar until fluffy and pale.
  • Mix in molasses, eggs, and vanilla extract until smooth.
  • Gradually add the flour mixture and buttermilk, mixing gently until just combined.

Baking

  • Divide the batter evenly among the cupcake liners, filling each about two-thirds full.
  • Bake for 18-20 minutes, or until a toothpick comes out clean.
  • Let the cupcakes cool completely on a wire rack.

Frosting

  • In a bowl, beat the softened cream cheese and butter together until smooth.
  • Gradually add powdered sugar and vanilla, mixing until fluffy.
  • Once cupcakes are cooled, pipe the frosting on top.

Notes

For maximum success, make sure your butter and cream cheese are at room temperature. Do not overmix the batter to achieve tender results.
