Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  • In a medium bowl, whisk together the flour, baking soda, cinnamon, ginger, cloves, nutmeg, and salt. Set aside.

Mixing

  • In a large bowl, cream together the softened butter and brown sugar until light and fluffy, about 2-3 minutes.
  • Add the egg, molasses, and vanilla extract to the butter-sugar mixture and mix until well incorporated.
  • Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. If too soft, chill the dough in the fridge for about 30 minutes.

Shaping and Baking

  • On a lightly floured surface, roll the dough out to about ¼-inch thickness.
  • Use cookie cutters to cut out desired shapes and place them on the prepared baking sheets.
  • Bake for 8-10 minutes, or until the edges are slightly browned. Let cool on a wire rack.

Icing

  • Prepare the royal icing by beating egg whites until stiff peaks form. Gradually add powdered sugar and lemon juice until smooth.
  • Divide icing into bowls and add food coloring to create various shades.
  • Decorate cooled cookies with a piping bag, allowing icing to dry before serving.
