  • 4 pieces cod fillets (about 6 oz each)
  • 2 tbsp olive oil
  • to taste Salt and pepper
  • 1/4 cup soy sauce (low sodium recommended)
  • 2 tbsp honey
  • 1 tbsp fresh ginger, grated
  • 1 tbsp garlic, minced
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tsp sesame seeds (for garnish)
  • 2 tbsp green onions, chopped (for garnish)

Preparation

  • In a small saucepan, combine the soy sauce, honey, grated ginger, minced garlic, rice vinegar, and sesame oil. Bring this mix to a simmer over medium heat, stirring occasionally until the sauce thickens (about 5-7 minutes).
  • While the glaze simmers, heat olive oil in a large skillet over medium-high heat. Season the cod fillets with salt and pepper on both sides.

Cooking

  • Add the seasoned cod fillets to the skillet and cook for 3-4 minutes on each side until they are golden brown and reach an internal temperature of 145°F (63°C).
  • Reduce the heat to low and pour the ginger soy glaze over the fish. Cook for an additional 1-2 minutes, allowing the flavors to absorb.
  • Garnish with sesame seeds and chopped green onions. Serve immediately with steamed rice or vegetables.

Notes

For added heat, a splash of sriracha can be included. Marinating the cod in the glaze for 30 minutes enhances flavor. Ensure the skillet is hot for a perfect crust.
