Preparation

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • In a large bowl, toss peeled and cut sweet potato sticks with olive oil, minced garlic, Italian seasoning, salt, and black pepper until well coated.
  • Transfer the sweet potato mixture onto the prepared baking sheet, arranging them in a single layer.

Cooking

  • Bake the sweet potato sticks in the oven for 20 minutes.
  • After 20 minutes, remove the baking sheet and sprinkle grated Parmesan cheese over the sticks.
  • Return the tray to the oven and bake for an additional 10-15 minutes or until golden and crispy.

Serving

  • Garnish with fresh parsley before serving.

Notes

These can be prepared in advance and stored in the fridge. An air fryer can be used for a healthier version, and you can substitute Parmesan with nutritional yeast.
