Ingredients
  

Steak and Potatoes

  • 1.25 lb sirloin steak, cut into 1-inch pieces
  • 1.25 lb baby Yukon gold potatoes, halved

Seasonings and Liquids

  • 2 tbsp olive oil, divided
  • 1.25 tsp kosher salt
  • 1 tsp freshly ground black pepper
  • 0.75 tsp paprika
  • 0.5 tsp onion powder
  • 1 tbsp Worcestershire sauce
  • 0.25 cup low-sodium beef broth
  • 1 tbsp lemon juice, freshly squeezed
  • 0.25 tsp crushed red pepper flakes (optional)

Herbs and Fats

  • 3 tbsp unsalted butter
  • 2.5 tsp garlic, minced
  • 1.5 tsp fresh rosemary, chopped
  • 1.5 tsp fresh thyme, chopped
  • 1 tbsp fresh parsley, chopped (for garnish)

Instructions
 

Preparation

  • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  • Add the pieces of sirloin steak seasoned with kosher salt and freshly ground black pepper. Sear for about 5-7 minutes until golden brown, then remove and set aside.

Cooking Potatoes

  • In the same skillet, add the remaining tablespoon of olive oil and toss in the halved baby Yukon gold potatoes. Cook for about 10 minutes, stirring occasionally until they start to become tender.

Combining Ingredients

  • Add paprika, onion powder, and optional crushed red pepper flakes to the potatoes.
  • Stir in the minced garlic, Worcestershire sauce, and beef broth, scraping up any brown bits for extra flavor.
  • Return the seared steak to the skillet and add unsalted butter, chopped rosemary, and thyme. Stir everything together.

Finishing Touches

  • Squeeze fresh lemon juice over the dish and let it simmer for another 4-5 minutes until the potatoes are cooked and the steak is at your preferred doneness.
  • Garnish with freshly chopped parsley and serve hot.

Notes

For added flavor, marinate your steak in Worcestershire sauce and olive oil for an hour before cooking. Adding vegetables like bell peppers can enhance the dish.
