Preparation

  • Cook the pasta according to the package directions. Once al dente, drain and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the chicken pieces and cook until browned and cooked through, approximately 6-8 minutes. Season with salt, pepper, and Italian seasoning.
  • Remove the chicken from the skillet and set aside. In the same skillet, melt the butter over medium heat and sauté the minced garlic until fragrant, about 1 minute.
  • Pour in the chicken broth and scrape any brown bits from the bottom of the pan. Simmer for 2-3 minutes.
  • Add the heavy cream and grated Parmesan cheese, stirring until smooth and creamy.
  • Return the chicken to the skillet and toss to coat. Cook for an additional 2-3 minutes until the sauce thickens slightly.
  • Serve the chicken and sauce over the cooked pasta, garnishing with chopped parsley and additional grated Parmesan.

Notes

For best results, cook chicken in batches to avoid overcrowding. You may add vegetables such as spinach or cherry tomatoes for added nutrition.
