Preparation

  • Season the chuck roast generously with salt and pepper.
  • In a large Dutch oven, heat olive oil over medium-high heat until shimmering.
  • Carefully place the roast in the pot and sear on all sides until beautifully browned, about 3-4 minutes per side. Remove from the pot and set aside.
  • In the same pot, add sliced onions and minced garlic. Cook until the onions are translucent and fragrant, around 8-10 minutes.
  • Pour in the beef broth and balsamic vinegar, scraping up any browned bits from the bottom.
  • Return the seared chuck roast to the pot, submerging it in the liquid. Add thyme sprigs and bay leaves, then bring to a gentle simmer and cover tightly.

Cooking

  • Transfer the Dutch oven to a preheated oven at 325°F (160°C) and cook undisturbed for about 3-4 hours until the roast is fork-tender.

Serving

  • Remove from the oven and let the roast rest for 15 minutes before slicing or shredding. Serve hot with creamy mashed potatoes or crusty bread.
