Instructions
 

Preparation

  • Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  • Add the thinly sliced onions and stir gently, cooking for 15-20 minutes until caramelized.
  • Add minced garlic and cook for an additional minute.
  • In another pot, brown 1 lb of beef stew meat over medium-high heat, seasoning with salt and pepper.
  • Combine caramelized onions with the beef in the pot.

Cooking

  • Pour in 4 cups of low-sodium beef broth, 2 tablespoons of soy sauce, 1 tablespoon of Worcestershire sauce, and 1 teaspoon of dried thyme.
  • Bring to a boil, then reduce to low, covering the pot to simmer for approximately 1 hour.
  • Prepare 1 cup of egg noodles according to package instructions and drain.
  • After 1 hour, mix in the cooked noodles and top with 1 cup of shredded cheese.
  • Cover to melt the cheese, then garnish with fresh parsley and serve immediately.

Notes

Cooking can be done quickly or slowly for enhanced flavors. Cut beef chunks evenly and season adequately for the best results.
