  • 4 pieces Cod fillets (4-oz each, preferably thawed)
  • 1/4 cup Unsalted butter
  • 1 medium Lemon (juiced and zested)
  • 1/2 tsp Garlic powder
  • 3/4 tsp Sea salt
  • 1/4 tsp Black pepper
  • 1 tbsp Fresh parsley (chopped) For garnish

Preparation

  • Preheat your oven to 400 degrees F (204 degrees C).
  • Pat the cod fillets dry with paper towels and arrange them in a single layer in a 9x13 baking dish.
  • Melt the unsalted butter in a small bowl and stir in the lemon juice and zest until fully incorporated.
  • Brush the lemon butter generously over the cod fillets. Season with garlic powder, sea salt, and black pepper on both sides.
  • Place the baking dish in the preheated oven and bake for 12-15 minutes until the cod is opaque and flakes easily with a fork.
  • Once baked, sprinkle with fresh parsley and serve immediately with your favorite sides.

Notes

For added flavor, consider adding a pinch of crushed red pepper flakes or a tablespoon of yogurt or sour cream to the melted butter. Store leftovers in an airtight container in the fridge for up to two days or freeze for up to two months.
