Tart Crust

Pistachio Filling

  • 1/2 cup shelled pistachios Earthy and nutty, ground to create a creamy texture.
  • 1/4 cup heavy cream Luxurious and rich, resulting in a velvety filling.
  • 1/4 cup powdered sugar Sweetening the pistachio filling to perfection.
  • 1 tsp vanilla extract An aromatic note that enhances the overall flavor.
  • 2 tbsp unsalted butter, softened Bringing smoothness to the filling.

Topping

  • 1/4 cup cherry jam or preserves Bright, sweet-tart flavor, offering a vibrant color.

Instructions
 

Preparation of Tart Crust

  • Preheat the oven to 350°F (175°C) and prepare mini tartlet pans by greasing and flouring them.
  • In a food processor, combine flour and powdered sugar, then add cold cubed butter. Pulse until the mixture resembles coarse crumbs.
  • Add the egg yolk and ice water, pulsing until the dough comes together. Roll the dough into a ball, then flatten it into a disk and refrigerate for 30 minutes.
  • Roll out the chilled dough into a thin circle and cut out smaller circles to press into the tartlet pans. Bake for 10-12 minutes until golden brown, then cool completely.

Preparation of Pistachio Filling

  • Pulse shelled pistachios in a food processor until finely ground. In a bowl, combine ground pistachios, heavy cream, powdered sugar, vanilla extract, and softened butter until creamy.
  • Spread cherry jam into the cooled tartlet crusts and pipe or spoon the pistachio filling on top.
  • Top with fresh cherries and sprinkle with crushed pistachios.

Notes

Ensure your butter is cold for the crust and don’t skip the chilling time. These tartlets can be served at tea parties, bridal showers, or as a sweet ending to festive gatherings.
